Quick Sweet Potato Pancakes with Peach Crisp Topping

For pancakes:

Ingredients

  • ¼ tsp nutmeg

  • ¼ tsp cinnamon

  • 1 can sweet potatoes including juice

  • 1 ½ cup instant pancake mix

Directions:

  1. in a blender puree sweet potatoes and liquid till smooth (or mash sweet potatoes by hand, masher or whip),

  2. Add water to make a total of 2 ½ cups.

  3. Mix with pancake mix and seasonings till smooth, adjusting with water or more mix till smooth pourable consistency.

  4. Spoon into a preheated skillet and cook till golden brown on each side and batter is fully cooked in the middle.

 

For topping:

Ingredients

  • ¼ cup old fashioned oats

  • Dash of cinnamon and nutmeg

  • 1 can sliced peaches, drained

  • ¼ cup maple syrup

Directions:

In a small sauce pot heat up all ingredients to a light simmer and allow to cook for about 5 min, stirring occasionally, until oats are tender but not mushy
