BBQ Lentil Salad

Ingredients

  • ½ cup BBQ sauce

  • ½ c red wine vinegar                   

  • 1 can corn

  • 1 can black eyed peas or other bean, drained    

  • 1 tsp dried basil

  • ½ Lb. bacon diced and cooked, fat reserved        

  • ¼ cup oil

  • ½ Lb. dried lentils                                                    

  • 3cups of water or stock                                                     

  • 1 tsp. dried thyme                                                   

  • 1Tbl. red pepper flake

  •  2 onion, diced                                                          

  • 2 bell peppers, diced                                                

  • 4 clove garlic                                                            


Directions:

  1. In a large pot, cook lentils in water with red pepper flake and thyme till desired tenderness, allow to cool.

  2. In a blender combine BBq sauce, garlic, basil, vinegar, reserved bacon fat, and oil until combined. 

  3. In a large bowl mix cooled lentils, onion, pepper, corn, beans, and dressing mix thoroughly and allow to rest in refrigerator for at least 1 hour and serve.
