Mixed Fruit Rice Bowl

Ingredients

  • 1 onion, diced

  • 1 cup corn

  • 2 cup rice

  • 2.5 cup stock

  • ½ cup diced watermelon 

  • ½ cup diced honeydew

  • ½ cup diced avocado

  • ½ cup diced apple

  • 2Tbl. Vinegar

  • Salt and pepper to taste

Direction

  1. In a medium pot, sauté onion till soft then add corn.

  2. Add the rice and stock, bring to a boil and reduce temperature to low and cover.

  3. Allow to cook till rice is tender.

  4. In a separate bowl mix diced fruit and vinegar and allow to sit for about 30 min.

Simple sauce

Ingredients

  • 1 Tbl. Vinegar

  • 1/8 cup instant mashed potato

  • 3 cup stock

  • ¼ cup soy sauce

Directions

  1. In a small pot reduce stock by half, add soy sauce and vinegar.

  2. Slowly whisk in instant mashed potatoes (or cornstarch slurry) till desired thickness.
