Mixed Fruit Rice Bowl
Ingredients
1 onion, diced
1 cup corn
2 cup rice
2.5 cup stock
½ cup diced watermelon
½ cup diced honeydew
½ cup diced avocado
½ cup diced apple
2Tbl. Vinegar
Salt and pepper to taste
Direction
In a medium pot, sauté onion till soft then add corn.
Add the rice and stock, bring to a boil and reduce temperature to low and cover.
Allow to cook till rice is tender.
In a separate bowl mix diced fruit and vinegar and allow to sit for about 30 min.
Simple sauce
Ingredients
1 Tbl. Vinegar
1/8 cup instant mashed potato
3 cup stock
¼ cup soy sauce
Directions
In a small pot reduce stock by half, add soy sauce and vinegar.
Slowly whisk in instant mashed potatoes (or cornstarch slurry) till desired thickness.
