Chocolate and Peppermint Iced Beet Cookies

Ingredients

  • ½ cup maple syrup

  • 1 can cream of coconut

  • ½ cup sugar split

  • 1 cup peppermint hot chocolate mix

  • 1 can sliced beets with juice, pureed

  • 1 cup oatmeal

  • 3/4 cup flour

  • 1 egg

  • 2 apples diced

Directions

  1. In a large bowl mix beet puree, apples, oatmeal, flour, maple syrup, ¼ cup sugar and egg.

  2. Mix thoroughly till well combined.

  3. Spoon out onto a lightly greased baking sheet and bake at 350 degrees for 15 minutes.

    For the icing:

  4. In a small sauce pan heat up cream of coconut and whisk in hot chocolate mix and ¼ cup sugar till dissolved and simmer for 5 minutes.

  5. Top cookies with icing and enjoy
