Citrus Quinoa Salad

Ingredients

  • 1 finger sized piece of ginger, grated

  • 2 clove garlic

  • Olive oil, half the amount of combined orange and lemon juice

  • ¼ cup walnuts, toasted

  • 1 Tbls. Honey

  • Salt and pepper to taste

  • 1 cup quinoa cooked and cooled

  • 1 head broccoli, florets removed and stem grated

  • 1 cup grapes, halved

  • 2 carrots, grated

  • 1 bunch green onions, greens finely chopped

  • 2 lemons, zested and juiced

  • 3 oranges, zested and juiced

Directions

  1. In a blender, combine citrus juices and zest, onion whites, ginger, garlic, walnuts, honey and oil.

  2. Pulse till well combined and adjust seasoning.

  3. In a large bowl, combine quinoa, broccoli, grapes, carrots, and onion greens with dressing and mix thoroughly.

  4. Allow to set in refrigerator for at least a half hour.
