Vegetable Packed Stuffed Banana Peppers
Ingredients
½ lb. potato, shredded
½ lb. ground pork
1c. bacon, cooked and chopped
1 Tbls. ground cinnamon
2 tsp. ground nutmeg
½ c oatmeal
2 Tbl. Oil
12 banana peppers, top cut off and seeded
½ c bell peppers, diced
½ c quinoa, cooked
3 clove garlic, chopped
3 apples, diced
1 large onion, diced
1 zucchini, shredded
Directions
Mix together bell pepper, onion, garlic, apple, half the oil and salt and pepper.
Roast in 350 degree oven till golden brown and slightly soft, allow to cool.
Combine cooled mixture with the rest of the ingredients, excluding the Banana peppers.
Stuff Banana peppers with the mixture and place on a lined baking sheet.
Bake in 350 degree oven until internal temperature is 155 degrees, about a half hour.
