Pinto bean and rice “falafel”

Ingredients

  • 1 pkg taco seasoning

  • 1 cup rice, dried

  • ¼ cup bread crumbs

  • 1 cup dried pinto beans

  • 4 cup water or stock

  • 1 medium onion, diced

  • 3 clove garlic, chopped

Directions

  1. Wash the beans and check for any foreign material.

  2. In a large pot sauté off onion till translucent then add garlic continue to cook till fragrant.

  3. Add beans and water.

  4. Bring to a boil then reduce to a simmer. Allow to simmer till beans are tender.

  5. Add rice and seasoning packet (salt and pepper if desired), continue to cook till rice is fully cooked.

  6. Pour into a cake pan and allow to cool completely then add bread crumb.

  7. Mash with a fork, whisk, potato masher or hands.

  8. Form into patties and sear in a preheated electric skillet or sauté pan till golden brown on both sides.

  9. Serve with chimichurri
